  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp ginger, minced
  • 3 cloves garlic, minced
  • 1 tbsp brown sugar
  • ½ tsp gochugaru (Korean red chili flakes)
  • 8 oz lamb chops (8 oz total)
  • 1 tsp sesame seeds, toasted
  • 2 stalks scallions, sliced
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Instructions

    Whisk together soy sauce, sesame oil, rice vinegar, minced ginger, garlic, brown sugar, and gochugaru in a bowl to create the marinade.

    Pat lamb chops dry and season lightly with salt and pepper. Place in a shallow dish and pour marinade over, turning to coat evenly. Let rest for 10-15 minutes at room temperature.

    Preheat grill or grill pan to high heat (about 450°F). Oil the grates to prevent sticking.

    Grill lamb chops for 3-4 minutes per side for medium-rare, basting with any remaining marinade halfway through cooking.
