Ingredients
- ¾ lb beef belly slices (samgyeopsal), thin-cut
- 6 oz scallops, large
- 5 oz squid, cleaned, sliced into rings and tentacles
- 3 tbsp gochujang (Korean red chili paste)
- 1 tbsp butter
- 8 leaves butter lettuce or romaine leaves

Heat a large cast-iron griddle or skillet over high heat until a water droplet sizzles instantly.

Pat beef belly slices dry with a paper towel. Season lightly with salt and pepper.

Lay beef slices flat on the griddle without moving for 90 seconds. Flip and cook 60 seconds more until edges crisp and center stays juicy.

Push beef to the side of the griddle. Add scallops and squid to the hot surface. Cook 2–3 minutes, tossing gently, until scallops are opaque and squid firms up.

Stir gochujang with 1 tbsp water and the butter until it melts into a glossy sauce. Drizzle over the beef and seafood on the griddle.

Transfer beef, scallops, and squid to a platter. Serve hot with lettuce leaves for wrapping.
