Ingredients

  • 1.5 lb beef short ribs (flanken-cut, 1/4-inch thick)
  • 4 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp brown sugar
  • 4 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 3 whole scallions, sliced thin (white and green parts separated)

Instructions

    Pat beef ribs dry. Combine soy sauce, sesame oil, brown sugar, garlic, and ginger in a bowl.

    Add beef ribs to marinade, toss to coat evenly, and let sit 8 minutes at room temperature.

    Heat a heavy skillet or grill pan over medium-high until it smokes, about 2 minutes.

    Sear ribs without moving 2–3 minutes per side until edges caramelize and meat browns deeply.

    Pour remaining marinade into pan, tilting to coat ribs, and cook 1 minute until glaze sets.

    Slide onto a plate, scatter white scallion parts over top, drizzle with any pan glaze, and serve hot.
