Ingredients

  • 1 kg zucchini
  • 2 tsp salt
  • 200 g feta cheese
  • ¾ cup all-purpose flour
  • 3 tbsp fresh dill
  • 2 tbsp fresh mint
  • 2 whole eggs
  • ½ tsp black pepper
  • ½ cup olive oil
  • 1 cup Greek yogurt
  • ½ whole cucumber
  • 2 whole garlic cloves
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill

    Grate zucchini and place in a colander. Sprinkle with salt and let sit for 10 minutes to release moisture.

    Squeeze zucchini firmly with paper towels to remove excess liquid.

    Crumble feta cheese into a large bowl. Add drained zucchini, flour, dill, mint, eggs, and pepper. Mix until well combined.

    Heat olive oil in a large skillet over medium-high heat until shimmering.

    Form zucchini mixture into patties about 3 inches wide. Carefully place in hot oil, working in batches to avoid crowding.

    Fry for 3-4 minutes per side until golden brown and crispy. Transfer to paper towels to drain.

    Grate cucumber and squeeze dry. Mix Greek yogurt with grated cucumber, minced garlic, lemon juice, and dill for tzatziki sauce.
