- 2 tbsp fresh mint
- 2 whole eggs
- ½ tsp black pepper
- ½ cup olive oil
- 1 cup Greek yogurt
- ½ whole cucumber
- 2 whole garlic cloves
- 1 tbsp lemon juice
- 1 tbsp fresh dill

Grate zucchini and place in a colander. Sprinkle with salt and let sit for 10 minutes to release moisture.

Squeeze zucchini firmly with paper towels to remove excess liquid.

Crumble feta cheese into a large bowl. Add drained zucchini, flour, dill, mint, eggs, and pepper. Mix until well combined.
