Ingredients

  • ½ cup fine bulgur (no. 1)
  • ½ medium yellow onion, minced very fine
  • ½ cup fresh mint, chopped
  • 3 tbsp lemon juice
  • ½ tsp allspice (ground)

Instructions

    Combine ground lamb, bulgur, minced onion, mint, lemon juice, allspice, salt, and pepper in a bowl.

    Mix gently with your hands or a fork until the bulgur absorbs the lemon juice and the mixture holds together, ~2 minutes.

    Taste and adjust lemon, salt, and allspice until bright and savory.
