Kerala Beef Fry

Ingredients
- 750 g beef (cut into thin strips)
- 3 tbsp coconut oil
- 2 large onions (sliced thin)
- 6 cloves garlic (minced)
- 1 tbsp ginger (minced)
- 3 whole green chilies (slit lengthwise)
- 2 sprigs curry leaves
- 1.5 tsp red chili powder
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp black pepper (freshly ground)
- ¾ cup coconut (fresh, grated)
- 1 tsp salt
- 1 tbsp lemon juice

Cut beef into thin strips against the grain and set aside.

Slice onions thinly, mince garlic and ginger, and slit green chilies lengthwise.

Heat 1.5 tbsp coconut oil in a large skillet over medium-high heat. Add beef in batches and sear until browned on edges, about 2-3 minutes per batch. Remove and set aside.

Add remaining coconut oil to the skillet. Add sliced onions and cook until golden brown and crispy, about 5-6 minutes.

Add garlic, ginger, and green chilies. Sauté for 1 minute until fragrant.

Add red chili powder, turmeric, coriander, and black pepper. Stir continuously for 30 seconds to bloom the spices.

Return beef to the skillet and toss to coat with spices. Cook for 2-3 minutes over medium heat.

Add grated coconut and curry leaves. Stir well and cook for another 3-4 minutes until beef is tender and coconut is lightly toasted.

Season with salt and lemon juice. Toss everything together and cook for 1 minute. Remove curry leaves before serving.
