Ingredients
- 2.5 lb green plantains (about 6 medium)
- 1 large onion, diced
- 14 oz tomatoes, diced (canned or 3 fresh)
- 3 tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp cumin
- 1 pinch salt and pepper to taste
- 2 tbsp fresh cilantro or parsley, chopped (optional)

Peel plantains by cutting off ends and slicing skin lengthwise, then prying away the peel.

Cut peeled plantains into 2-inch rounds. Arrange on a cutting board in stacks.

Heat olive oil in a heavy-bottomed pot over medium. Add onion and cook until soft, ~5 minutes.

Stir in garlic and cumin, cooking until fragrant, about 30 seconds.

Add diced tomatoes with juice and a pinch of salt. Simmer for 8 minutes.

Arrange plantain rounds in the pot, nestling them into the sauce in layers.
