Ingredients

  • 2.5 lb green plantains (about 6 medium)
  • 1 large onion, diced
  • 14 oz tomatoes, diced (canned or 3 fresh)
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp cumin
  • 1 pinch salt and pepper to taste
  • 2 tbsp fresh cilantro or parsley, chopped (optional)

Instructions

    Peel plantains by cutting off ends and slicing skin lengthwise, then prying away the peel.

    Cut peeled plantains into 2-inch rounds. Arrange on a cutting board in stacks.

    Heat olive oil in a heavy-bottomed pot over medium. Add onion and cook until soft, ~5 minutes.

    Stir in garlic and cumin, cooking until fragrant, about 30 seconds.

    Add diced tomatoes with juice and a pinch of salt. Simmer for 8 minutes.

    Arrange plantain rounds in the pot, nestling them into the sauce in layers.

    Cover and simmer over medium-low heat for 15–20 minutes until plantains are very soft.

    Taste and adjust seasoning with salt and pepper.

    Serve hot, topped with fresh cilantro or parsley if desired.
