Ingredients

  • 1 lb deli-counter beef brisket, sliced 0.75-inch thick
  • 3 tbsp ketchup
  • 1 tbsp molasses
  • 1 tbsp yellow mustard
  • 1 tsp Worcestershire sauce
  • ½ tsp smoked paprika

Instructions

    Pat brisket slices dry with paper towels. Season both sides generously with salt and black pepper.

    Heat 1 tbsp neutral oil in a 12-inch cast iron skillet over medium-high until it shimmers, about 60 seconds.

    Sear brisket slices 90 seconds per side without moving. They should develop a dark brown crust.

    Whisk ketchup, molasses, mustard, Worcestershire, and paprika in a small bowl until smooth.

    Pour glaze over brisket and turn slices to coat. Toss for 1 minute until edges look caramelized and sticky.
