Ingredients

  • 3 tbsp butter
  • 500 g quark (or ricotta + sour cream blend)
  • 4 whole eggs
  • 3 tbsp granulated sugar
  • 1 tsp lemon zest
  • 2 tbsp cornstarch

Instructions

    Preheat oven to 375°F (190°C). Rub a 10-inch cast-iron skillet with 1 tbsp butter.

    Whisk eggs with sugar and lemon zest until pale and thick, about 2 minutes.

    Fold quark and cornstarch into eggs until just combined—don't overmix.

    Pour mixture into the buttered skillet. Dot the top with remaining 2 tbsp butter.

    Bake until the top is golden brown and the center jiggles only slightly, 12–14 minutes.
