Ingredients
- ½ kg beef stew meat, cubed
- ½ kg pork stew meat, cubed
- ¼ kg lamb stew meat, cubed
- 4 medium onions, sliced
- 2 teaspoons salt
- ½ teaspoon black pepper
- 1 teaspoon allspice berries
- 2 whole bay leaves
- 500 ml beef or game stock
- 500 ml water

Cut all meat into 2-3 cm cubes, removing excess fat. Pat dry with paper towels.

Peel and slice onions into rings. Preheat oven to 160°C.

Layer half the meat in a large heavy-bottomed Dutch oven, seasoning with salt, pepper, allspice, and bay leaves.

Layer half the onions over the meat, then repeat with remaining meat, seasonings, and onions.

Pour stock and water over the layered meat and onions. Cover with lid and transfer to preheated oven.

Braise for 2.5 to 3 hours, stirring occasionally, until all meat is very tender. Skim fat from surface as needed.

Taste and adjust seasoning with salt and pepper. Serve hot with lingonberry jam, pickled cucumber, and crusty bread.
