Ingredients

  • 1.5 lb squid, cleaned and cut into 1/4-inch rings
  • ¾ cup all-purpose flour
  • 2 cup neutral oil for frying
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 whole lemon, cut into wedges

Instructions

    Pat squid rings dry with paper towels. They must be completely dry or oil will spatter.

    Mix flour with salt and black pepper in a shallow bowl.

    Heat oil in a heavy-bottomed pot or deep skillet to 350°F. Use a thermometer.

    Toss squid with flour until all rings are lightly coated. Shake off excess.

    Carefully lower squid into oil in two batches. Do not crowd the pan.

    Fry until deep golden brown, 1.5 to 2 minutes per batch. Surface should be crispy.

    Remove with a slotted spoon and drain on paper towels. Keep warm.
