Ingredients
- 1.25 lb chicken breast, cubed
- 1 lb spaghetti
- 28 oz canned crushed tomatoes
- 1 medium onion, diced
- 1 large red bell pepper, diced
- 2 tbsp tomato paste
- 3 cloves garlic, minced
- 1 to taste olive oil, salt, pepper, cayenne pepper

Boil salted water in a large pot. Add spaghetti and cook until al dente, ~9 minutes.

Reserve 1 cup pasta water, then drain pasta and set aside.

Heat 3 tbsp olive oil in a large skillet over medium-high heat, ~90 seconds.

Add chicken cubes. Cook, stirring occasionally, until golden on edges, ~6 minutes.

Add diced onion and bell pepper. Sauté until soft, ~4 minutes.

Stir in minced garlic and tomato paste. Cook until fragrant, ~60 seconds.

Add crushed tomatoes and 0.75 cup reserved pasta water. Season with salt, pepper, and cayenne.

Simmer uncovered for 8 minutes, stirring occasionally, until sauce thickens slightly.

Add cooked spaghetti to the sauce. Toss to coat, adding more pasta water if needed for consistency.
