Ingredients

  • 1.25 lb chicken breast, cubed
  • 1 lb spaghetti
  • 28 oz canned crushed tomatoes
  • 1 medium onion, diced
  • 1 large red bell pepper, diced
  • 2 tbsp tomato paste
  • 3 cloves garlic, minced
  • 1 to taste olive oil, salt, pepper, cayenne pepper

Instructions

  1. 1

Boil salted water in a large pot. Add spaghetti and cook until al dente, ~9 minutes.

  2. 2

Reserve 1 cup pasta water, then drain pasta and set aside.

  3. 3

Heat 3 tbsp olive oil in a large skillet over medium-high heat, ~90 seconds.

  4. 4

Add chicken cubes. Cook, stirring occasionally, until golden on edges, ~6 minutes.

  5. 5

Add diced onion and bell pepper. Sauté until soft, ~4 minutes.

  6. 6

Stir in minced garlic and tomato paste. Cook until fragrant, ~60 seconds.

  7. 7

Add crushed tomatoes and 0.75 cup reserved pasta water. Season with salt, pepper, and cayenne.

  8. 8

Simmer uncovered for 8 minutes, stirring occasionally, until sauce thickens slightly.

  9. 9

Add cooked spaghetti to the sauce. Toss to coat, adding more pasta water if needed for consistency.

  10. 10

Simmer 2 minutes more. Taste and adjust seasoning.

  11. 11

Serve hot. Optional: drizzle with olive oil and top with fresh parsley if desired.
