Ingredients
- 3 oz dried sweet potato glass noodles (dangmyeon)
- 2 whole eggs
- 1.5 cups cooked white rice (warm)
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- ½ tbsp sugar

Boil water in a pot. Add glass noodles and cook until chewy, about 6 minutes. Drain.

In the same pot, whisk soy sauce, sesame oil, and sugar together. Add the cooked noodles and toss until glossy, about 1 minute.

Heat a skillet over medium-high with a thin coat of oil. Crack in the eggs and fry until whites set but yolks still jiggle, about 3 minutes.
