Ingredients

  • 1 lb pork spare ribs or short ribs (1-inch thick)
  • 3 tbsp soy sauce
  • 2 tbsp mirin or honey
  • 1 tbsp rice vinegar
  • 2 cups broccoli florets
  • 1 cup baby potatoes, halved
  • 1 cup carrots, cut into 1-inch rounds

Instructions

    Heat oven to 450°F. Pat ribs dry with paper towels and season with salt and pepper on both sides.

    Whisk soy sauce, mirin, rice vinegar, and 2 tbsp water in a small bowl until combined.

    Toss broccoli, potatoes, and carrots with 1 tbsp oil, salt, and pepper on a sheet pan, then push to the edges.

    Place ribs in the center of the pan, brush generously with soy glaze, and roast for 14 minutes.

    Brush ribs with remaining glaze, toss vegetables to coat with pan juices, then roast 4 minutes more until edges brown.

    Divide ribs and vegetables between plates. Drizzle any pan juices over the top and serve hot.
