Ingredients
- 1 lb pork spare ribs or short ribs (1-inch thick)
- 3 tbsp soy sauce
- 2 tbsp mirin or honey
- 1 tbsp rice vinegar
- 2 cups broccoli florets
- 1 cup baby potatoes, halved
- 1 cup carrots, cut into 1-inch rounds

Heat oven to 450°F. Pat ribs dry with paper towels and season with salt and pepper on both sides.

Whisk soy sauce, mirin, rice vinegar, and 2 tbsp water in a small bowl until combined.

Toss broccoli, potatoes, and carrots with 1 tbsp oil, salt, and pepper on a sheet pan, then push to the edges.
