Italian Sausage and White Bean Skillet with Kale

Ingredients
- 1 lb Italian sausage, casings removed
- 30 oz cannellini beans, drained and rinsed
- 1 bunch lacinato kale, stemmed and torn
- 4 garlic cloves, sliced
- 1 yellow onion, diced
- 2 tbsp olive oil
- ½ cup chicken broth
- ½ tsp red pepper flakes
- ½ tsp kosher salt

Heat the olive oil in a large skillet over medium-high. Add the sausage and break it into bite-size pieces with a wooden spoon. Cook until well browned, about 6 minutes.

Add the onion and cook until soft and translucent, about 4 minutes. Stir in the garlic and red pepper flakes and cook for 30 seconds more.

Add the white beans and broth. Use the back of a spoon to mash a small handful of beans against the side of the pan to thicken the liquid.

Pile the kale on top, cover, and let it steam for 2 to 3 minutes.

Stir the wilted kale into the beans, taste for salt, and serve in shallow bowls.
