Ingredients

  • 1 sheet (thawed) frozen puff pastry
  • 4 cups (packed) fresh spinach
  • 1 cup ricotta
  • ¾ cup mozzarella, shredded
  • ½ cup parmesan, grated
  • 1 pinch each salt, black pepper, and nutmeg to taste

Instructions

    Preheat oven to 400°F. Line a 9-inch tart pan or baking sheet with parchment paper.

    Wilt spinach in a large skillet over medium heat, stirring occasionally, until completely dry, ~5 minutes.

    Let spinach cool slightly, then roughly chop and transfer to a bowl.

    Stir ricotta, mozzarella, parmesan, salt, pepper, and nutmeg into the spinach until well combined.

    Lay puff pastry sheet on prepared pan. Spread spinach-cheese filling evenly, leaving 1-inch border.

    Fold pastry edges over filling, pleating as you go. Some filling will show in the center.

    Bake until pastry edges are golden brown and center fills have set, 20-25 minutes.

    Cool 5 minutes. Slice into wedges and serve warm or at room temperature.
