Irish Porter Cake

Ingredients
- 2.5 cups all-purpose flour
- ½ cup butter
- 1 cup brown sugar
- 1 cup porter beer or stout
- 1.5 cups dried fruit (raisins, currants, or mixed)
- 2 large eggs
- 1.5 tsp baking powder

Heat oven to 350°F. Butter and flour a 9-inch round cake pan.

Pour porter into a small pot. Bring to a simmer over medium heat, then remove from heat.

Stir dried fruit into the hot porter. Let sit 10 minutes to plump.

In a large bowl, beat butter and brown sugar until pale and fluffy, ~3 minutes.

Add eggs one at a time, beating well after each addition.

Whisk flour and baking powder together, then fold into the butter mixture.

Fold the porter-soaked fruit (and any liquid) into the batter until combined.

Pour into prepared pan. Bake 50–60 minutes until a toothpick comes out clean.

Cool in pan 15 minutes, then turn out onto a wire rack to cool completely.
