Irish Boxty with Caramelized Onions

Ingredients
- 1.5 lb potatoes, russet or yukon gold
- ¾ cup all-purpose flour
- 1 large egg
- 2 medium onions, yellow
- 3 tbsp butter
- ½ cup sour cream
- 1 to taste salt and black pepper
- 2 tbsp olive oil

Peel potatoes and cut into chunks. Boil in salted water until tender, ~12 minutes.

Drain potatoes. Mash half of them. Grate the other half on a box grater into a clean kitchen towel.

Wring the grated potato hard over the sink to remove as much liquid as possible.

Combine mashed and grated potatoes in a bowl. Add flour, egg, salt, and pepper. Mix until just combined.

Slice onions into thin half-moons. Heat 1 tbsp butter in a skillet over medium.

Add onions. Cook, stirring occasionally, until deeply golden and sweet, ~20 minutes.

Heat remaining 2 tbsp butter and olive oil in a 12-inch skillet over medium-high until foaming.

Scoop potato mixture into 8 patties roughly 3 inches across. Flatten slightly with a spatula.

Slide 4 patties into the hot skillet. Don't move them. Cook until the bottom edges are golden brown.

Flip once. Cook until the other side is crispy and golden, ~2 minutes. Transfer to a plate.

Repeat with the remaining 4 patties. Top with caramelized onions and a dollop of sour cream.
