Ingredients

  • 6 oz bacon, cut into 1-inch pieces
  • 1 small head (about 1.5 lbs) cabbage, halved and cut into wedges
  • 1.5 lbs potatoes, peeled and quartered
  • 2 cups chicken or vegetable broth
  • 1 small onion, peeled and halved
  • 1 to taste salt and black pepper

Instructions

    Render bacon in a large pot over medium heat, stirring occasionally, until edges crisp.

    Add potatoes and onion, pour in broth, and bring to a simmer.

    Simmer covered for 12 minutes until potatoes soften slightly.

    Add cabbage wedges, pressing down gently. Cover and simmer 10 minutes.

    Check cabbage and potatoes are tender. Season with salt and pepper.

    Serve in bowls, dividing bacon, vegetables, and broth evenly.
