Ingredients
- 1 cup jasmine rice
- ½ lb beef sirloin
- ½ block firm tofu
- 2 large eggs
- 2 tbsp sambal oelek
- 2 tbsp soy sauce
- ¼ cup peanuts
- ½ medium cucumber

Cook 1 cup jasmine rice according to package directions; keep warm.

Slice 0.5 lb beef sirloin thinly against the grain. In a bowl, mix beef with 1 tbsp soy sauce and 1 tbsp sambal oelek; set aside.

Cut 0.5 block firm tofu into cubes. Heat 2 tbsp oil in a skillet over medium-high; fry tofu until golden on all sides, about 6 minutes. Remove and set aside.

In the same skillet, add beef and cook until browned and cooked through, about 4 minutes. Remove and set aside.

Boil 2 eggs in water for 8 minutes; drain, cool, peel, and halve.

Slice 0.5 cucumber into thin rounds. Roughly chop 0.25 cup peanuts.

Assemble bowls: rice, beef, tofu, egg, cucumber, peanuts. Drizzle with remaining 1 tbsp sambal and 1 tbsp soy sauce; squeeze lime if desired.
