Ingredients
- 2 cups poha (flattened rice)
- 1 medium potatoes, peeled and diced small
- ½ medium onion, finely chopped
- ¼ cup unsalted roasted peanuts, crushed
- ½ tsp mustard seeds
- ¼ tsp turmeric powder
- 1 tbsp lime juice
- 2 tbsp fresh cilantro, chopped

Rinse poha in a fine-mesh strainer under cool water until softened, about 30 seconds. Drain well.

Heat 1 tbsp oil in a large skillet over medium. Add mustard seeds and cook until they pop, ~30 seconds.

Add diced potatoes and onion. Sauté, stirring occasionally, until potatoes soften, 6–7 minutes.

Sprinkle turmeric and salt over potatoes. Stir and cook for 30 seconds until fragrant.
