Ingredients

  • 2 cups poha (flattened rice)
  • 1 medium potatoes, peeled and diced small
  • ½ medium onion, finely chopped
  • ¼ cup unsalted roasted peanuts, crushed
  • ½ tsp mustard seeds
  • ¼ tsp turmeric powder
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped

Instructions

    Rinse poha in a fine-mesh strainer under cool water until softened, about 30 seconds. Drain well.

    Heat 1 tbsp oil in a large skillet over medium. Add mustard seeds and cook until they pop, ~30 seconds.

    Add diced potatoes and onion. Sauté, stirring occasionally, until potatoes soften, 6–7 minutes.

    Sprinkle turmeric and salt over potatoes. Stir and cook for 30 seconds until fragrant.

    Add rinsed poha to the skillet. Toss gently to combine, cooking until heated through, 2 minutes.

    Remove from heat. Drizzle lime juice over the mixture and toss to coat evenly.

    Divide between bowls. Top with crushed peanuts and cilantro. Serve immediately.
