Ingredients
- 1 cup poha (flattened rice)
- 2 whole potatoes, medium
- ½ whole onion, small
- ¼ cup peanuts, roasted unsalted
- 2 tbsp olive oil
- ¼ tsp turmeric powder
- 1 whole lemon (juiced)
- 3 tbsp fresh cilantro, chopped

Cut potatoes into small 1/4-inch cubes. Dice onion finely.

Rinse poha briefly under cold water until softened, about 15 seconds. Drain well.

Heat oil in a large skillet over medium heat until shimmering, about 1 minute.

Add diced potatoes and cook, stirring, until edges soften and begin to brown, 6–7 minutes.

Add onion and turmeric, stir constantly until onion is soft and fragrant, about 2 minutes.

Add drained poha and peanuts, toss gently until heated through and combined, 2 minutes.

Remove from heat. Squeeze lemon juice over the mixture and stir.
