Ingredients
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1.5 tsp baking powder
- 1 large egg
- ¾ cup milk
- ½ cup canned sweet red bean paste (azuki)

Whisk flour, sugar, and baking powder together in a bowl.

Beat egg and milk together, then pour into the dry mix.

Stir just until combined—batter should be slightly lumpy.

Heat oil in a 10-inch nonstick skillet over medium heat, ~2 minutes.

Scoop 2 tbsp batter into the pan, flatten slightly with the back of the spoon.

Drop 1 tsp red bean paste in the center, then top with 2 more tbsp batter.

Cook 2–3 minutes per side until golden brown and the filling is warm.
