- ¾ cup poppy seeds
- ½ cup milk
- ¼ cup honey
- 1 teaspoon lemon zest

Preheat oven to 375°F. Press the 1 pie crust into a 9 inch tart pan, trimming edges. Prick bottom with a fork.

In a saucepan, combine 0.75 cup poppy seeds, 0.5 cup milk, and 0.25 cup honey. Simmer over medium heat until thick, about 5 minutes, stirring constantly.

Remove from heat and stir in 1 teaspoon lemon zest. Let cool slightly.
