Ingredients

  • 1 9 inch pie crust
  • ¾ cup poppy seeds
  • ½ cup milk
  • ¼ cup honey
  • 1 teaspoon lemon zest

Instructions

    Preheat oven to 375°F. Press the 1 pie crust into a 9 inch tart pan, trimming edges. Prick bottom with a fork.

    In a saucepan, combine 0.75 cup poppy seeds, 0.5 cup milk, and 0.25 cup honey. Simmer over medium heat until thick, about 5 minutes, stirring constantly.

    Remove from heat and stir in 1 teaspoon lemon zest. Let cool slightly.

    Pour filling into crust and smooth top. Bake until crust is golden and filling is set, about 15 minutes.
