Ingredients

  • ½ lb Mexican chorizo
  • 4 whole Large eggs
  • ¼ medium White onion
  • 2 tbsp Fresh cilantro
  • ½ whole Lime
  • ½ whole Jalapeño

    Remove chorizo casing and crumble meat into bite-sized pieces.

    Dice onion into 0.25-inch pieces.

    Crack eggs into a bowl and whisk until yolks and whites combine.

    Mince jalapeño, removing seeds for less heat if desired.

    Chop cilantro into 0.5-inch pieces.

    Heat 10-inch skillet over medium-high heat for 1 minute.

    Add chorizo and cook, stirring occasionally, until edges crisp.

    Add diced onion and cook until soft, stirring frequently.

    Pour beaten eggs directly into the skillet with chorizo.

    Reduce heat to medium and let eggs sit undisturbed for 15 seconds.
