Ingredients

  • 1 cup warm water (110°F)
  • 2.25 tsp instant yeast
  • 1 tbsp sugar
  • 3 cups all-purpose flour
  • 1.5 tsp salt
  • ½ cup baking soda
  • 1 whole egg, beaten
  • 2 tbsp coarse sea salt, for topping
  • 2 tbsp unsalted butter, melted

    Mix warm water, yeast, and sugar in a large bowl. Let sit 5 minutes until foamy.

    Add flour and salt. Stir until shaggy dough forms, then knead 8–10 minutes until smooth.

    Cover bowl with plastic wrap. Let rise at room temperature until doubled, 45–60 minutes.

    Preheat oven to 425°F. Line two baking sheets with parchment paper.

    Divide dough into 24 equal pieces. Roll each piece into a 4-inch rope.

    Fill a large pot with 2 quarts water. Bring to a boil, then stir in baking soda—the water will foam.

    Working in batches, boil pretzel bites 30 seconds each. Remove with a slotted spoon to a paper towel.

    Arrange boiled bites on parchment. Brush with beaten egg until all pieces are coated.
