Ingredients
- 1 cup warm water (110°F)
- 2.25 tsp instant yeast
- 1 tbsp sugar
- 3 cups all-purpose flour
- 1.5 tsp salt
- ½ cup baking soda
- 1 whole egg, beaten
- 2 tbsp coarse sea salt, for topping
- 2 tbsp unsalted butter, melted
Instructions
- 1
Mix warm water, yeast, and sugar in a large bowl. Let sit 5 minutes until foamy.
- 2
Add flour and salt. Stir until shaggy dough forms, then knead 8–10 minutes until smooth.
- 3
Cover bowl with plastic wrap. Let rise at room temperature until doubled, 45–60 minutes.
- 4
Preheat oven to 425°F. Line two baking sheets with parchment paper.
- 5
Divide dough into 24 equal pieces. Roll each piece into a 4-inch rope.
- 6
Fill a large pot with 2 quarts water. Bring to a boil, then stir in baking soda—the water will foam.
- 7
Working in batches, boil pretzel bites 30 seconds each. Remove with a slotted spoon to a paper towel.
- 8
Arrange boiled bites on parchment. Brush with beaten egg until all pieces are coated.
- 9
Sprinkle coarse sea salt over each bite. Bake 12–14 minutes until deep golden brown.
- 10
Remove from oven. Brush warm bites with melted butter. Serve with mustard or cheese sauce.
