Ingredients
- 2.5 cups rolled oats
- ¾ cup honey
- 4 tbsp unsalted butter
- 1 cup almonds or walnuts, coarsely chopped
- ½ cup pumpkin seeds or sunflower seeds
- ¾ cup dried cranberries or raisins
- 1 tsp vanilla extract
- ½ tsp salt
- ½ tsp cinnamon

Preheat oven to 350°F. Line a 9×13-inch baking pan with parchment paper.

Melt butter and honey together in a small saucepan over low heat, ~2 minutes, until combined.

Remove from heat and stir in vanilla extract.

In a large bowl, combine oats, nuts, seeds, dried fruit, salt, and cinnamon.

Pour honey-butter mixture over the dry ingredients and stir until everything is evenly coated.
