Ingredients

  • 2.5 cups rolled oats
  • ¾ cup honey
  • 4 tbsp unsalted butter
  • 1 cup almonds or walnuts, coarsely chopped
  • ½ cup pumpkin seeds or sunflower seeds
  • ¾ cup dried cranberries or raisins
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ tsp cinnamon

Instructions

    Preheat oven to 350°F. Line a 9×13-inch baking pan with parchment paper.

    Melt butter and honey together in a small saucepan over low heat, ~2 minutes, until combined.

    Remove from heat and stir in vanilla extract.

    In a large bowl, combine oats, nuts, seeds, dried fruit, salt, and cinnamon.

    Pour honey-butter mixture over the dry ingredients and stir until everything is evenly coated.

    Transfer mixture to the prepared pan and press firmly into an even layer with a spatula or your hands.

    Bake until golden brown and the edges just begin to crisp, 14–16 minutes.

    Cool in the pan for 10 minutes, then transfer to a cutting board and let cool completely.

    Cut into 12 bars. Store in an airtight container for up to 5 days.
