Ingredients
- 2 chops pork chops (bone-in or boneless, 1 inch thick)
- 1 lb potatoes, peeled and cut into 1-inch chunks
- 2 medium apples (Honeycrisp or Gala), peeled, cored, and cut into 8 wedges each
- 4 tbsp butter, divided
- 1 pinch salt and pepper to taste
- ½ cup whole milk or cream

Place potatoes in a pot, cover with cold salted water. Bring to a boil.

While potatoes cook, pat pork chops dry with paper towels.

Season both sides of pork chops generously with salt and pepper.

Heat 1 tbsp butter in a large skillet over medium-high until foaming.

Sear pork chops 5–6 minutes per side without moving until golden. Transfer to a plate.

Add 1 tbsp butter to the same skillet. Add apple wedges in a single layer.

Cook apples 3–4 minutes per side until light gold and tender. Transfer to the plate.

Drain potatoes when fork-tender, ~12–14 minutes. Return to the pot.

Mash potatoes with remaining 2 tbsp butter and milk until creamy. Season with salt and pepper.

Divide mashed potatoes between two plates. Top each with a pork chop and apple wedges.
