Ingredients
- 1.25 lb pork shoulder, cut into 1-inch cubes
- 1 cup yellow split peas, rinsed
- 3 medium carrots, sliced into 1/2-inch rounds
- 2 medium leeks, white and light green parts, sliced 1/2-inch thick
- 6 cups water
- 1 tbsp Dijon mustard
- 3 sprigs fresh thyme (or 1 tsp dried)
- 1 pinch salt and black pepper to taste

Heat olive oil in a large pot over medium-high heat until shimmering, ~90 seconds.

Add pork cubes and brown on all sides without stirring constantly, ~5 minutes. Work in batches if needed.

Pour water into the pot, scraping up any browned bits from the bottom.

Add split peas, carrots, leeks, and thyme. Bring to a boil, then reduce heat and simmer.

Simmer uncovered for 35–40 minutes until pork is tender and peas are completely soft.

Stir in mustard and season with salt and black pepper to taste.

Remove thyme sprigs if used fresh. Serve hot in bowls.
