Ingredients

  • 2 cans (15 oz each) canned chickpeas, drained and rinsed
  • 1 large cucumber, diced
  • 1 medium red bell pepper, diced
  • ¼ cup red onion, thinly sliced
  • 1 large lemon (juiced) and zest
  • 3 tbsp olive oil
  • ½ cup fresh herbs (parsley and dill, chopped)
