Ingredients

  • 4 large eggs
  • 1.5 tbsp butter
  • 2 tbsp fresh chives, chopped
  • 1 tbsp fresh parsley or dill, chopped
  • 0 to taste salt and pepper

Instructions

    Crack eggs into a bowl. Add salt and pepper. Whisk until yolks and whites are completely combined.

    Melt butter in a nonstick skillet over medium heat until foamy, about 60 seconds.

    Pour eggs into the skillet. Let sit without stirring for 20 seconds, then gently push curds from edges toward center.

    Continue stirring gently every 15-20 seconds until eggs are creamy but no liquid remains, about 2 minutes total.

    Remove from heat. Fold in chives and parsley. Taste and adjust salt and pepper.

    Divide between plates. Serve immediately.
