Ingredients

  • 4 6 oz each salmon fillets
  • ½ cup, chopped fresh parsley
  • ¼ cup, chopped fresh dill
  • 2 cloves, minced garlic
  • 3 tablespoons olive oil
  • 1 medium, cut into wedges lemon
  • 1 teaspoon salt
  • ½ teaspoon black pepper

    Pat the 4 salmon fillets dry with paper towels and season both sides with the 1 tsp salt and 0.5 tsp black pepper.

    In a small bowl, mix the 0.5 cup chopped parsley, 0.25 cup chopped dill, 2 minced garlic cloves, and 2 tbsp of the olive oil to form a thick paste.

    Press the herb mixture evenly onto the top of each salmon fillet, covering the surface completely.

    Heat the remaining 1 tbsp olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes.

    Place the salmon herb-side down in the skillet and cook until the crust is golden and crisp, about 3-4 minutes.

    Flip the salmon and cook to your desired doneness, about 4-6 minutes more for medium, until the fish flakes easily with a fork.
