Ingredients

  • ¼ cup fresh parsley
  • 1 tbsp fresh rosemary
  • 1 tbsp fresh thyme
  • 2 cloves garlic cloves, minced
  • 1 tsp lemon zest
  • 3 tbsp extra virgin olive oil
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 2 pieces bone-in pork chops, 1.5-inch thick
  • 1 tbsp olive oil for searing
  • 2 wedges lemon wedges

Instructions

    Finely chop parsley, rosemary, thyme, and garlic. Combine in a small bowl with lemon zest, 3 tbsp olive oil, salt, and pepper to create the herb paste.

    Pat pork chops dry with paper towels and season both sides lightly with salt and pepper.

    Heat 1 tbsp olive oil in a 12-inch cast iron skillet over medium-high heat until shimmering.

    Sear pork chops for 4-5 minutes per side until golden brown and internal temperature reaches 145°F (63°C).

    Spread herb crust evenly over the top of each pork chop during the last minute of cooking, pressing gently.

    Transfer to a plate and let rest for 3-4 minutes before serving with lemon wedges.
