- 2.5 cups all-purpose flour
- 1 teaspoon instant yeast
- 1 teaspoon salt
- 1 cup warm water
- 3 tablespoons olive oil
- 4 slices bacon
- 2 tablespoons fresh herbs (such as rosemary, thyme, or oregano)

In a large bowl, mix 2.5 cups flour, 1 tsp yeast, and 1 tsp salt. Add 1 cup warm water and 2 tbsp olive oil; stir until a shaggy dough forms.

Turn dough onto a floured surface and knead until smooth and elastic, about 8 minutes. Place in an oiled bowl, cover, and let rise until doubled, about 1 hour.

While dough rises, cook 4 slices bacon in a skillet over medium until crisp, about 6 minutes. Drain on paper towels, then crumble.

Preheat oven to 450°F. Punch down dough and roll into an oval about 1/2 inch thick on a baking sheet lined with parchment.

Use a knife to cut 3-4 slashes in the dough, then stretch them open with your fingers to create the classic leaf shape. Brush with remaining 1 tbsp olive oil.
