  • 1 lb sushi-grade ahi tuna, cubed into 0.75-inch pieces
  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp ginger, freshly minced
  • 1 clove garlic clove, minced
  • ½ tsp sriracha or chili paste
  • 2 tbsp green onion, sliced thin
  • 1 tbsp white sesame seeds
  • 2 cup cooked sushi rice, warmed
  • ½ cup cucumber, julienned
  • 1 whole avocado, sliced
  • ¼ sheet nori seaweed sheet, cut into strips
  • 2 tbsp pickled ginger (optional garnish)
  • ¼ cup edamame, steamed and salted

Instructions

    Prepare the marinade by whisking together soy sauce, rice vinegar, sesame oil, minced ginger, minced garlic, and sriracha in a small bowl until well combined. The mixture should be glossy and fragrant, about 30 seconds of whisking.

    Pat the sushi-grade ahi tuna cubes completely dry with a clean kitchen towel to help the marinade adhere. Place the dried tuna in a glass bowl or container.

    Pour the marinade over the tuna cubes and gently fold to coat evenly, being careful not to break the delicate fish. Let marinate at room temperature for 10 minutes, or cover and refrigerate for up to 2 hours for deeper flavor.

    Divide the warm sushi rice between two serving bowls, pressing gently to create an even base. The rice should still be slightly warm and hold its shape.

    Arrange the marinated tuna in the center of each rice bowl, drizzling any remaining marinade evenly over the top. The tuna should look glossy and well-coated with the soy-sesame glaze.

    Build the bowl by arranging julienned cucumber, avocado slices, edamame, and nori strips around the tuna in organized sections. This creates an authentic poke bowl presentation and allows diners to customize each bite.
