Ingredients

  • 1 lb lamb shoulder, cut into 1-inch cubes
  • 3 tbsp harissa paste
  • 3 clove garlic, minced
  • ½ tsp ground cumin
  • 1 whole lemon (juiced + wedges for serving)
  • 4 piece warm flatbread or pita

Instructions

    Pat lamb dry. Toss with harissa, garlic, cumin, lemon juice, salt, and pepper until coated.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 1 minute.

    Add lamb, spread in a single layer, and sear 3 minutes without stirring until edges caramelize.

    Stir and sear another 2-3 minutes until lamb is cooked through and surface is dark.

    Warm flatbread in the same skillet for 30 seconds per side, or wrap in foil.

    Serve lamb in warm bread with lemon wedges on the side.
