Ingredients

  • 3 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp harissa paste
  • 1 can (14 oz) canned crushed tomatoes
  • ½ tsp ground cumin
  • 1.25 lb white fish fillets (cod, halibut, or sea bass)
  • ¼ cup fresh cilantro or parsley, chopped

Instructions

    Heat oil in a large skillet over medium-high. Add onion and cook, stirring occasionally, until softened and golden, about 4 minutes.

    Stir in garlic and harissa, cook until fragrant, about 45 seconds. Be careful not to burn the garlic.

    Pour in crushed tomatoes and cumin. Stir well and bring to a gentle simmer, about 2 minutes.

    Nestle fish fillets into the sauce. Season with salt and pepper. Simmer uncovered until fish flakes easily at the thickest part, 8–10 minutes.

    Taste and adjust seasoning. Scatter cilantro or parsley over the top.
