  • 1 medium yellow onion
  • ½ cup apple cider vinegar (or white vinegar)
  • ½ cup water
  • ½ tsp caraway seeds
  • 1 pinch salt and black pepper to taste
  • 1 loaf dark bread (pumpernickel or rye) for serving

Instructions

    Slice handkäse into 0.5-inch-thick rounds. Arrange in a shallow bowl.

    Slice onion into thin half-moons. Separate the rings.

    Whisk vinegar, water, caraway seeds, salt, and pepper in a small bowl.

    Distribute onion rings over cheese. Pour vinegar mixture over top.
