Ingredients
- 1 loaf baguette
- 4 oz ham
- 2 hard-boiled eggs
- ½ cup shredded cheese
- ¼ cup pickled red peppers
- 2 tbsp olive oil
Instructions
- 1
Preheat the oven to 400°F. Slice the baguette into 1/2-inch thick rounds and brush both sides with the 2 tbsp olive oil. Arrange on a baking sheet.
- 2
Toast the bread in the oven until golden and crisp, about 8-10 minutes, flipping halfway. The edges should be lightly browned.
- 3
Top each crostini with a slice of ham, a slice of hard-boiled egg, and a sprinkle of the 1/2 cup shredded cheese.
- 4
Return to the oven and bake until the cheese is melted and bubbly, about 5-7 minutes. Watch closely so the edges don't burn.
- 5
Remove from the oven and top with the 1/4 cup chopped pickled red peppers. Serve warm.
