- 4 heads bok choy
- 6 cups chicken broth
- 2 cloves garlic
- 1 inch ginger
- 1 tbsp soy sauce
- 1 tsp sesame oil
- ½ tsp black pepper
Instructions
- 1
Thinly slice the 2 garlic cloves and 1 inch ginger. Trim the 4 bok choy heads and cut them in half lengthwise, then rinse well to remove any grit.
- 2
In a large pot, heat the 1 tsp sesame oil over medium heat. Add the garlic and ginger and cook until fragrant, about 1 minute, stirring constantly.
- 3
Pour in the 6 cups chicken broth and 1 tbsp soy sauce. Bring to a boil, then reduce heat to low and simmer for 5 minutes to blend flavors.
- 4
Add the 8 oz ham slices and the bok choy. Simmer until the bok choy is tender and bright green, about 5-7 minutes.
- 5
Season with the 0.5 tsp black pepper. Taste and add more soy sauce if needed. Serve hot, ensuring each bowl gets some ham and bok choy.
