Ingredients

  • 1 lb white cheese (akawi or halloumi), string
  • ½ cup shredded mozzarella
  • 1.5 cups sugar
  • 1 cup water
  • 2 tbsp rose water
  • ½ cup shelled pistachios, coarsely crushed
  • 8 oz pitted dates

Instructions

  1. 1

Combine sugar and water in a small pot. Bring to a boil, then simmer 5 minutes until syrupy.

  2. 2

Remove from heat and stir in rose water. Set aside to cool slightly.

  3. 3

Pat the white cheese dry. Layer a piece of string cheese flat, place mozzarella in the center, then roll tightly into a cylinder.

  4. 4

Heat a skillet over medium-high until very hot. Pan-fry each roll seam-side down until golden and cheese starts to ooze, ~2 minutes per side.

  5. 5

Transfer rolls to a shallow bowl. Pour warm rose syrup over them immediately.

  6. 6

Top with crushed pistachios. Serve warm alongside dates and hot black tea.
