Ingredients
- 1 lb white cheese (akawi or halloumi), string
- ½ cup shredded mozzarella
- 1.5 cups sugar
- 1 cup water
- 2 tbsp rose water
- ½ cup shelled pistachios, coarsely crushed
- 8 oz pitted dates

Combine sugar and water in a small pot. Bring to a boil, then simmer 5 minutes until syrupy.

Remove from heat and stir in rose water. Set aside to cool slightly.

Pat the white cheese dry. Layer a piece of string cheese flat, place mozzarella in the center, then roll tightly into a cylinder.

Heat a skillet over medium-high until very hot. Pan-fry each roll seam-side down until golden and cheese starts to ooze, ~2 minutes per side.

Transfer rolls to a shallow bowl. Pour warm rose syrup over them immediately.
