Ingredients

  • 1.5 lb ground beef
  • 1 medium yellow onion, diced
  • 1.5 lb potatoes, peeled and quartered
  • 4 tbsp butter
  • ½ cup whole milk
  • 1 pinch salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

    Preheat oven to 400°F. Boil potatoes in salted water until fork-tender, ~15 minutes.

    Heat olive oil in a 10-inch oven-safe skillet over medium-high heat until shimmering.

    Add onion; sauté until softened and light golden, ~4 minutes.

    Add ground beef, breaking up with a spoon. Cook until no pink remains, ~6 minutes.

    Season beef mixture with salt and pepper. Spread evenly in the skillet.

    Drain potatoes. Mash with 3 tbsp butter and milk until smooth and creamy.

    Spread mashed potatoes evenly over the beef, then dot top with remaining 1 tbsp butter.

    Bake until the potato top is golden brown, ~15 minutes.

    Remove from oven. Scatter parsley over top if desired. Let rest 5 minutes, then serve.
