- 1.5 lb ground beef
- 1 medium yellow onion, diced
- 1.5 lb potatoes, peeled and quartered
- 4 tbsp butter
- ½ cup whole milk
- 1 pinch salt and pepper to taste
- 2 tbsp fresh parsley, chopped (optional)

Preheat oven to 400°F. Boil potatoes in salted water until fork-tender, ~15 minutes.

Heat olive oil in a 10-inch oven-safe skillet over medium-high heat until shimmering.

Add onion; sauté until softened and light golden, ~4 minutes.

Add ground beef, breaking up with a spoon. Cook until no pink remains, ~6 minutes.

Season beef mixture with salt and pepper. Spread evenly in the skillet.

Drain potatoes. Mash with 3 tbsp butter and milk until smooth and creamy.

Spread mashed potatoes evenly over the beef, then dot top with remaining 1 tbsp butter.
