Ingredients
- 1.5 lbs chicken thighs, boneless and skinless
- 1 cup natural peanut butter (or ground roasted peanuts)
- 1 medium onion, chopped
- 2 tbsp tomato paste
- 6 cups chicken stock
- 1.5 lbs cassava root, peeled and cubed
- 1 to taste salt and pepper

Heat olive oil in a large pot over medium-high. Add onion and cook until soft, about 4 minutes.

Stir in tomato paste and cook for 1 minute until fragrant.

Add chicken thighs and stock. Bring to a boil, then reduce heat and simmer 15 minutes.

While soup simmers, boil cassava in salted water until fork-tender, about 15 minutes.

Stir peanut butter into soup until smooth. Simmer 10 more minutes.

Season with salt and pepper to taste.

Drain cassava. Mash with a fork or potato masher until smooth. Shape into balls if desired.
