Ingredients
- 8 oz mixed mushrooms
- 1 red bell pepper
- 1 zucchini
- 1 red onion
- 3 tbsp olive oil
- 2 cloves garlic
- 1 tsp dried oregano
- ½ tsp salt

If using wooden skewers, soak 8 skewers in water for 30 minutes. Meanwhile, preheat the grill to medium-high heat.

Clean the 8 oz mushrooms and trim stems. Cut the 1 red bell pepper and 1 zucchini into 1-inch chunks. Cut the 1 red onion into wedges.

In a small bowl, mix 3 tbsp olive oil, 2 minced garlic cloves, 1 tsp dried oregano, and 0.5 tsp salt.

Thread the vegetables and mushrooms onto the skewers, alternating colors. Brush all sides with the garlic-herb oil.
