Ingredients
- 14 oz extra-firm tofu
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 3 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper

Press the 14 oz tofu for 15 minutes to remove excess water, then cut into 1-inch cubes. Cut the 1 red and 1 yellow bell pepper into 1-inch pieces and the 1 red onion into wedges.

In a large bowl, whisk together the 3 tbsp olive oil, 1 tsp smoked paprika, 0.5 tsp salt, and 0.25 tsp black pepper. Add the tofu and vegetables and toss gently to coat.

Thread the tofu, bell peppers, and onion onto skewers, alternating pieces. If using wooden skewers, soak them in water for 30 minutes first.

Preheat a grill or grill pan to medium-high heat. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the vegetables are tender and charred at the edges and the tofu is golden.
