Ingredients
- 1 lb shrimp, peeled and deveined
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup tomato puree
- ¼ cup fresh parsley, chopped
- 1 lemon
- ½ tsp salt
- ¼ tsp black pepper

In a bowl, toss the 1 lb shrimp with 2 tbsp olive oil, 1 minced garlic clove, 1/4 tsp salt, and 1/8 tsp black pepper. Let marinate for 10 minutes.

Meanwhile, heat 1 tbsp olive oil in a small saucepan over medium heat. Add the remaining 1 minced garlic clove and cook until fragrant, about 1 minute.

Stir in the 1 cup tomato puree, remaining 1/4 tsp salt, and 1/8 tsp black pepper. Simmer gently until slightly thickened, about 5 minutes. Stir in half the chopped parsley and remove from heat.

Preheat a grill or grill pan over medium-high heat. Thread the marinated shrimp onto skewers, about 4-5 per skewer.

Grill the skewers for 2-3 minutes per side, until shrimp are pink and opaque. Squeeze half the lemon over the skewers.

Spread the tomato puree on a serving platter. Arrange the shrimp skewers on top, sprinkle with remaining parsley, and serve with lemon wedges.
