Ingredients
- 4 fillet salmon fillets
- 1 head broccoli
- 3 medium carrots
- 3 tablespoon olive oil
- 1 whole lemon
- ½ cup fresh parsley
- 1 teaspoon salt
- ½ teaspoon black pepper

Preheat a grill or grill pan over medium-high heat. Cut the 1 head broccoli into florets and slice the 3 carrots into thin rounds.

Toss the broccoli and carrots with 1 tbsp olive oil, 0.5 tsp salt, and 0.25 tsp black pepper. Set aside.

In a small blender or food processor, combine the 0.5 cup parsley, juice of 1 lemon, 2 tbsp olive oil, and remaining 0.5 tsp salt and 0.25 tsp pepper. Blend until smooth, adding a splash of water if needed.

Brush the 4 salmon fillets with a little olive oil and season with the remaining salt and pepper. Place on the grill, skin-side down, and cook for 4-6 minutes until the flesh flakes easily with a fork.

While the salmon cooks, steam or sauté the vegetables in a skillet with 2 tbsp water over medium heat until tender-crisp, about 5-7 minutes.

Serve the salmon with the vegetables and drizzle the green sauce over everything. Add extra lemon wedges if desired.
