Ingredients

  • 1.5 lb pork tenderloin
  • 4 cups mixed vegetables (broccoli, cauliflower, carrots, zucchini, bell pepper)
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 cloves garlic
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. 1

Cut the 1.5 lb pork tenderloin into 1-inch cubes. In a bowl, whisk 2 tbsp olive oil, 2 tbsp soy sauce, 1 tbsp honey, and 2 minced garlic cloves. Add pork, toss to coat, and let marinate for 10 minutes.

  2. 2

Preheat grill or grill pan to medium-high. Thread pork onto skewers, reserving marinade. Season with 0.25 tsp salt and 0.25 tsp pepper.

  3. 3

Toss the 4 cups mixed vegetables with remaining 1 tbsp olive oil, 0.25 tsp salt, and 0.25 tsp pepper.

  4. 4

Grill pork skewers for 8-10 minutes, turning occasionally, until charred and cooked through (internal temp 145°F).

  5. 5

In a grill basket or on foil, grill vegetables for 8-10 minutes, stirring once, until tender and lightly charred.

  6. 6

Brush skewers with reserved marinade during last 2 minutes of grilling. Serve hot with vegetables.
