Ingredients
- 1.5 lb pork tenderloin
- 4 cups mixed vegetables (broccoli, cauliflower, carrots, zucchini, bell pepper)
- 3 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp honey
- 2 cloves garlic
- ½ tsp salt
- ½ tsp black pepper

Cut the 1.5 lb pork tenderloin into 1-inch cubes. In a bowl, whisk 2 tbsp olive oil, 2 tbsp soy sauce, 1 tbsp honey, and 2 minced garlic cloves. Add pork, toss to coat, and let marinate for 10 minutes.

Preheat grill or grill pan to medium-high. Thread pork onto skewers, reserving marinade. Season with 0.25 tsp salt and 0.25 tsp pepper.

Toss the 4 cups mixed vegetables with remaining 1 tbsp olive oil, 0.25 tsp salt, and 0.25 tsp pepper.

Grill pork skewers for 8-10 minutes, turning occasionally, until charred and cooked through (internal temp 145°F).

In a grill basket or on foil, grill vegetables for 8-10 minutes, stirring once, until tender and lightly charred.
