Ingredients

  • 1 lb pork intestines
  • ¼ cup vinegar
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 bamboo skewers

Instructions

    Clean the 1 lb pork intestines thoroughly under cold water, then soak in 0.25 cup vinegar and 1 tsp salt for 10 minutes to remove any odor. Rinse well and pat dry.

    Cut the intestines into 2-inch lengths. Thread 4-5 pieces onto each of the 8 bamboo skewers, pushing them snugly together.

    Season the skewers all over with 0.5 tsp black pepper and a pinch more salt if desired.

    Grill over medium-hot charcoal, turning every 2-3 minutes, until the outsides are charred and crispy and the insides are cooked through, about 10-12 minutes total.
