Ingredients

  • 4 pieces (about 1.5 lb) pork chops (bone-in, 3/4-inch thick)
  • 3 tbsp fish sauce
  • 3 tbsp brown sugar
  • 3 cloves garlic cloves, minced
  • 1 tbsp olive oil
  • ½ tsp each salt and black pepper

Instructions

    Pat pork chops dry with paper towels on both sides.

    Whisk fish sauce, brown sugar, and minced garlic in a small bowl until sugar dissolves.

    Heat olive oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

    Season pork chops with salt and pepper. Sear without moving for 3 minutes until golden crust forms.

    Flip chops and sear the other side 2 minutes until edges look opaque but centers feel springy.

    Pour fish sauce mixture over chops. Simmer 3-4 minutes, tilting pan to coat, until sauce caramelizes.
